Mexican Lasagna



Ingredients:
  • 680g ground beef
  • 5mL seasoned salt 
  • 40g envelope taco seasoning 
  • 1 (411g) can diced tomatoes (undrained)
  • 1 (430g) can tomato sauce 
  • 1 (100g) can chopped chiles
  • 500 mL small curd cottage cheese
  • 2 eggs beaten
  • 12 corn tortillas
  • 830 mL shredded monterrey jack cheese
  1. In a large skillet brown the meat, then drain.
  2. Add season salt, taco seasoning mix, tomatoes, tomato sauce, and chiles, then mix.
  3. Simmer the mixture uncovered for 15-20 minutes.
  4. Combine the cottage cheese and eggs in a separate bowl.
  5. In a greased 33.1 cm by 23.9 cm baking dish, layer half of the meat sauce, half of the torn corn tortillas, half of the cottage cheese mixture, and half of the monterrey jack cheese.
  6. Repeat the layers in the same order.
  7. Bake uncovered at 450 Kelvin for 30 minutes until bubbly.
